Ethnic America is dedicated to the outsider and American perspective of what is “authentic food” and “is this food or not”. As someone who thoroughly enjoys food as well as the history behind the food, discussions can be led with much heat as we try to define what is “authentic” and what is “not authentic” in our terms. I try to explore different cuisines from the perspective of the people who created the cuisine who some may take for trash and others take for gold.
